Halloween cupcakes!

Hi gang. Just a quick one to let you know that our ghoulishly good Halloween Cupcakes are now available to order over on the main site. Every order will include extra special spooky piping at no extra cost, and a devilish mixture of flavours sure to frighten and, er, delighten.

Ingredients: Tate and Lyle FairTrade Sugar

We use Tate & Lyle sugars in our cupcakes and icing which are produced at their Thames Refinery in East London. Both T&L's Icing and Caster sugar are accredited as Fairtrade, meaning that the farmers and smallholders get a fairer deal and that money goes towards education, health and other community projects. All Tate & Lyle sugar is refined from natural cane sugar, which gives a superior taste and texture to sugar refined from sugar beet.

We use Tate & Lyle's Fairtrade Caster sugar primarily for its wonderfully sweet, natural taste and fine crystals, which help make the sponge in our cupcakes light, delicious and moist. We use their Fairtrade Icing sugar because it produces a fantastically smooth buttercream icing with a sweet but natural flavour.

We also use T&L Fairtrade Royal Icing sugar (to make smoother, firmer icing for piped decorations and designs) and Fairtrade Brown sugar. Our sugarpaste (for covered cakes and custom decorations) comes from M&B, a family-run business in North London who have been making and supplying high-quality sugarpaste to expert cake makers for over 20 years.

Themes are all very well but sometimes it's nice just to let the colours and sprinkles fly you know? Here's some fun colourful minis we did for the guys over at George Smith...


We have a winner!

Huge thanks to everyone who entered our Create a Cupcake competition; we had over 350 entries for new cupcake flavours ranging from the sublime to the rid...er, less sublime. All of us were itching to try Tara's Chocolate, Chilli and Cucumber suggestion, and also in with a shout was Johnson's inspired Elvis is in the Building! cupcake - banana sponge with peanut butter frosting and bacon. Other notable flavours included Apple and Cinammon, Bubblegum, Marshmallow and Caramel, CocaCola, Chocolate and Pecan and lots, lots more. Our sincerest thanks to everyone who entered - we had a blast reading through all the great suggestions and trying out a few of our favourites.

There had to be a winner though and after much deliberation we settled on Kathryn's Razzmatazz: a Raspberry and Lime cupcake topped with sherbet frosting. A simple yet delicious flavour combination and... sherbet frosting!

As her prize Kathryn will soon be enjoying cupcakes in every conceivable size (well, giant, big and mini) on us, and will earn the admiration and respect of her peers when Razztatazz goes on sale in November as our Flavour of the Month!

Neon Rainbow cupcakes

Ingredients: Doves Farm Organic Flour

We're big supporters of organic farming and responsible production, but we're even bigger supporters of great cakes. Having said that it's always nice when we try out ingredients and find that the organic option produces the best results. As one of the key ingredients in our cupcakes the choice of flour is very important. We use an organic self raising blend provided by Doves Farm - a family-owned mill based in Wiltshire. The organic farming process means Doves Farm flour is kinder to the environment and wildlife, but even better is helps produce the beautifully light, even sponge we demand for our cupcakes.
